They call pimento cheese the pate of the South. This Northern version adds cream cheese and a kosher dill to make it a great shmear for your bagel.

  • 6 oz. cream cheese, room temperature
  • 2 cups grated sharp cheddar cheese
  • 1 cup grated Monterey Jack cheese
  • 1 tablespoon finely grated onion
  • 1/4 cup mayonnaise
  • 3 tablespoon jarred pimento’s coarsely chopped
  • 1 kosher dill pickle, finely chopped
  • 1 teaspoon garlic powder
  • Salt and Pepper, to taste

Mix all the ingredients together in a medium-sized bowl. Cover with plastic wrap until ready to serve. Makes 1 cup.
