This easy chicken dish is the recipe I turn to on those Friday afternoons when I don’t have tons of time but want tons of flavor.
2 cut-up chickens
2/3 c. hoisin sauce
5 cloves garlic, minced
1 tsp. fresh grated ginger
1 tsp. sesame oil
1 tbsp. soy sauce
2 tbsp. rice vinegar
1/2 tsp. chili flakes
1 tbsp. sesame seeds (optional)
1. Preheat oven to 425F.
2. Lay chicken pieces out in a single layer in a roasting pan. Combine the rest of the ingredients, except sesame seeds, in a small bowl- mix well. With a brush cover chicken pieces in hoisin mixture.
3. Place in top third of oven for 25-30 minutes until juices run clear and sauce looks shiny and lacquered on the chicken pieces. If desired: sprinkle toasted sesame seeds across chicken before serving.
Makes 8-10 servings
