choc lovers bundt

This cake inspires a moment or two of satisfied silence from the chocoholics I know and love.

  • 2 c. all-purpose flour
  • 1/2 c. unsweetened cocoa powder
  • 1 box of chocolate pudding mix
  • 1 tbsp. baking powder
  • 3/4 c. salted butter
  • 1 1/3 c. sugar
  • 3 eggs
  • 1 c. buttermilk
  • 1 tbsp. vanilla extract
  • 1/2 c. mini chocolate chips
  1. Preheat oven to 350F, Spray a bundt pan with cooking spray.
  2. Whisk together flour, cocoa, pudding mix, and baking powder in a medium sized bowl.
  3. In a separate large bowl beat butter and sugar until light and fluffy. Beat in eggs one at a time, making sure to beat well after each one. Beginning and ending with the flour mixture, alternately beat the flour mixture and buttermilk into the butter mixture and then mix in vanilla extract and then fold in the mini chips. Pour batter into the prepared bundt pan and bake for 45-50 minutes.

Serves 8-10
