Nothing better than being greeted on your birthday morning with a birthday breakfast.   These pancakes are light and fluffy and completely fun thanks to the  festive rainbow sprinkles! The Mascarpone Maple Syrup is the icing on the (pan)cake.

Birthday Buttermilk Pancakes

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

2 tablespoons sugar

1/2 teaspoon salt

2 tablespoons melted butter

2 cups buttermilk

2 large eggs, lightly beaten

1/4 cup sprinkles

4 tablespoons butter

1. In a large bowl whisk together first 5 ingredients.  Stir the melted butter, buttermilk, eggs- into the dry ingredients, do not overmix.  Add the sprinkles to bowl and fold them  into the batter.

2.In a large skillet melt a tablespoon of butter at a time over medium high heat.  Scoop up 1/4 cupfuls of pancake batter and drop in sizzling pan.  Brown on both sides (about 1-2 minutes on each side). Serve on a plate with a drizzling of Mascarpone Maple Syrup (recipe below) and a scattering of sprinkles, if desired.

Recipe yields 10-12 pancakes.

Mascarpone Maple Syrup 

4 oz. mascarpone cheese (1/2 cup approx.)

3 tablespoons maple syrup

1-2 tablespoon milk

1. Mix together mascarpone and maple syrup until well-combined.  Thin out with milk if necessary.
